Prepare the Pickles
Drain the pickle chips and pat them dry with paper towels to remove excess moisture.

Make the Batter
In a bowl, combine flour, cornstarch, baking powder, cayenne pepper, salt, and black pepper. Gradually whisk in the cold beer (or club soda) until the batter is smooth.

Heat the Oil
In a large pot or deep fryer, heat oil to 350°F (175°C).

Fry the Pickles
Dip each pickle chip into the batter, allowing excess to drip off. Carefully place the battered pickles into the hot oil in batches. Fry for 2-3 minutes or until golden brown and crispy.

Drain and Serve
Remove the fried pickles from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot.

Make Sriracha Ranch Dressing
In a small bowl, mix together the ranch dressing and sriracha sauce until well combined. Adjust sriracha to taste.
