Slice the Potatoes

Wash and peel the Russet potatoes. Using a mandoline or sharp knife, slice the potatoes very thinly (about 1/8 inch thick) for even frying.

Soak in Water

Place the potato slices in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch. Drain and pat them dry with a clean towel.

Heat the Oil

In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Chips

Carefully add a handful of potato slices to the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

Season the Chips

While the chips are still warm, drizzle with truffle oil, and sprinkle with grated pecorino cheese, salt, and freshly ground black pepper. Toss gently to coat.

Serve

Serve immediately while warm and crispy, enjoying the rich flavors of truffle and pecorino.
