Make the Dough

In a mixing bowl, dissolve yeast in warm water. Let it sit for about 5 minutes until foamy. Add flour, salt, and olive oil. Mix until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.

Prepare the Toppings

While the dough is rising, slice the cherry tomatoes in half and set aside. Tear the fresh mozzarella into small pieces. Prepare the ricotta cheese and chop the basil leaves.

Shape the Pizza

Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a circle about 6 inches in diameter.

Assemble the Pizza

On one half of each dough circle, layer cherry tomatoes, mozzarella, ricotta, and fresh basil. Sprinkle with grated Parmigiano-Reggiano. Fold the dough over to create a half-moon shape and press the edges to seal.

Fry the Pizza

In a deep pan, heat olive oil over medium heat. Carefully add one or two pizzas at a time, frying until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Serve hot, garnished with extra basil if desired.
