Preparation and Cooking

    Prepare the Mushrooms

    Preheat your oven to 200°C (400°F). Clean the mushrooms with a damp cloth and slice them. Toss the sliced mushrooms with olive oil, salt, and black pepper. Spread them on a baking sheet and roast in the oven for about 15-20 minutes, or until they're golden and tender.

    Prepare the Dough

    While the mushrooms are roasting, roll out the pizza dough on a floured surface to about 1/4 inch thickness. Cut into circles using a cookie cutter or a glass.

    Assemble the Pizza

    Once the mushrooms are roasted, let them cool slightly. Take a dough circle, spread a tablespoon of ricotta cheese in the center, add some roasted mushrooms, and sprinkle with mozzarella and pecorino cheese. Drizzle a little truffle oil on top.

    Fry the Pizza

    Heat a generous amount of olive oil in a deep skillet over medium heat. Carefully add the assembled pizza rounds to the hot oil, frying until golden brown on each side, about 2-3 minutes per side. Use a slotted spoon to remove them and drain on paper towels.

    Serve

    Serve the Funghi Pizza Fritta hot, drizzled with additional truffle oil and garnished with fresh herbs if desired.
