In a food processor, combine basil leaves, pine nuts, Parmesan cheese, garlic, and olive oil. Blend until smooth. Season with salt and black pepper to taste.

Prepare the Pesto

Boil a pot of salted water and cook the linguine according to package instructions until al dente. Drain and reserve some pasta water.

Cook the Linguine

Toss the cooked linguine with the pesto sauce, adding reserved pasta water as needed to achieve desired consistency.

Combine

In a bowl, mix ricotta cheese, cooked spinach, Parmesan cheese, nutmeg, salt, and black pepper.

Prepare the Filling

Cook tortellini in boiling water according to package instructions until they float to the surface. Drain and cool slightly.

Cook the Tortellini

Stuff each tortellini with the ricotta mixture and set aside.

Fill the Tortellini

Preheat Oven

In a bowl, mix ricotta cheese, egg, salt, black pepper, and half of the mozzarella cheese.

Fill the manicotti shells with the ricotta mixture using a piping bag or spoon.

Fill the Manicotti

Spread a layer of marinara sauce in a baking dish, place filled manicotti on top, and cover with remaining marinara sauce. Sprinkle with remaining mozzarella and Parmesan cheese.

Assemble in Baking Dish

Cover with foil and bake for 25 minutes, then uncover and bake for an additional 10 minutes until bubbly and golden.
