Method
Preparation of Tuna

Dice the Tuna
Using a sharp knife, dice the yellowfin tuna into ½ inch cubes and place in a mixing bowl.
Making the Soy Reduction

Prepare the Soy Reduction
In a small saucepan, combine soy sauce, honey, and rice vinegar. Bring to a simmer over medium heat and reduce for about 10 minutes until it thickens slightly. Remove from heat and let cool.

Prepare the Pineapple
Cut the pineapple into small chunks and use a kitchen torch to lightly char the edges for added flavor. Set aside.

Chop the Chives
Finely chop the chives and set them aside as a garnish.

Mix the Garnishes
In a separate bowl, combine the seaweed salad, sesame seeds, and puffed rice.
Assembly

Assemble the Poke
In the bowl with diced tuna, pour in the cooled soy reduction and gently toss to coat the tuna evenly.

Plate the Dish
Spoon the tuna mixture into a serving bowl. Top with the charred pineapple, the seaweed salad mix, and a drizzle of garlic chili oil. Finally, sprinkle chopped chives on top for garnish.
