Sear the Steak
Heat a cast-iron skillet over high heat until very hot. Add the steaks and cook for 4-5 minutes on each side for medium-rare, adjusting time for desired doneness. Add garlic cloves and rosemary to the skillet in the last minute of cooking, basting the steaks with the flavorful oil.

Rest the Steak
Once cooked to your liking, remove the steaks from the skillet and let them rest for about 5 minutes before slicing.

Prepare the Potatoes
Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick). Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). You can test the oil by dropping a small piece of potato; it should sizzle immediately.

Drain and thoroughly dry the soaked potato strips. Fry them in batches in the hot oil for about 5-6 minutes until golden brown and crispy. Remove and drain on paper towels. Season with salt immediately while still hot.
