Canoli Shells Preparation

Make the Dough
In a mixing bowl, combine all-purpose flour, egg, olive oil, and salt. Gradually add water until a smooth dough forms. Knead for about 5 minutes until elastic.

Roll and Cut
On a floured surface, roll out the dough to about 1/8 inch thickness. Cut into rectangles (about 3x6 inches).

Fry the Shells
Heat oil in a deep frying pan over medium heat. Wrap each rectangle around a metal canoli tube and fry until golden brown, about 2-3 minutes. Remove from oil and let cool.
Smoked Salmon Mousse Preparation

Blend the Ingredients
In a mixing bowl, beat the cream cheese until smooth. Gradually add the smoked salmon, capers, shallots, lemon juice, dill, and black pepper. Mix until well combined.

Incorporate Heavy Cream
In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the salmon mixture until well combined.
Assembly

Fill the Canoli
Using a piping bag, fill each cooled canoli shell with the smoked salmon mousse.

Serve
Arrange the filled canoli on a serving platter. Garnish with extra capers or dill if desired.
