Preheat Oven
Preheat your oven to 400°F (200°C).

Prepare Oysters
Carefully shuck the Chesapeake Bay oysters, keeping the oyster liquor. Place them on a baking sheet, shell side down.

Sauté Spinach and Garlic
In the same skillet with reserved bacon fat, add minced garlic and sauté for about 30 seconds until fragrant. Add the fresh spinach and cook until wilted, about 2-3 minutes.

Combine Ingredients
In a mixing bowl, combine the wilted spinach and garlic mixture, crumbled bacon, heavy cream, anise liqueur, grated Parmesan cheese, salt, and black pepper. Mix well.
Assembly and Baking

Fill Oysters
Spoon the mixture evenly over each oyster, filling them generously.

Top with Breadcrumbs
Sprinkle breadcrumbs evenly over the filled oysters, and dot with small pieces of butter.

Bake
Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the topping is golden brown and the oysters are cooked through.
Serving

Serve Hot
Remove from the oven and allow to cool slightly before serving. Serve hot as an appetizer.
