Cake Ingredients

Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and lemon zest until well combined.

  3. 3

    Combine Wet Ingredients

In another bowl, whisk together the eggs, lemon juice, olive oil, and vanilla extract until smooth.

  4. 4

    Combine Wet and Dry Mixtures

Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix.

  5. 5

    Bake the Cake

Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

  6. 6

    Cool the Cake

Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

Topping Preparation

  1. 7

    Prepare Berries

While the cake is cooling, rinse the fresh mixed berries under cold water and gently pat them dry with a paper towel.

  2. 8

    Dust with Powdered Sugar

Once the cake has cooled completely, dust the top with powdered sugar using a fine sieve.

  3. 9

    Serve

Slice the cake and serve it warm or at room temperature, topped with the mixed berries.
