Goat Cheese Brulée

Prepare the Brulée Mixture
In a bowl, combine the goat cheese, heavy cream, egg, sugar, vanilla extract, and salt. Blend until smooth and creamy.

Cool and Caramelize
Remove ramekins from the water bath and cool in the refrigerator for at least 2 hours. Before serving, sprinkle a thin layer of sugar on top of each brulée and use a kitchen torch to caramelize the sugar until golden brown.

Let the Dough Rise
Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Shape the Pitas
Preheat the oven to 250°C (482°F). Punch down the dough and divide it into 6 equal pieces. Roll each piece into a ball and then flatten it into a disc about 1 cm thick.

Bake the Pitas
Place the discs on a baking sheet and bake for 5-7 minutes, or until they puff up and are lightly browned. Remove from the oven and cover with a towel to keep warm.
Balsamic Reduction

Cook the Balsamic
In a small saucepan, combine the balsamic vinegar and honey. Bring to a gentle simmer over medium heat, stirring occasionally, until reduced by half and syrupy, about 10-15 minutes.

Cool the Reduction
Remove from heat and let the balsamic reduction cool slightly before serving.
