Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare the Ramekins

Grease four 6-ounce ramekins with butter and dust with cocoa powder. This will help the cakes to release easily after baking.

Making the Batter

  1. 3

    Melt Chocolate and Butter

In a medium saucepan, melt the butter and chocolate chips together over low heat, stirring constantly until smooth. Remove from heat and let cool slightly.

  2. 4

    Mix Dry Ingredients

In a separate bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt until well combined.

  3. 5

    Combine Mixtures

Add the dry ingredients to the melted chocolate mixture. Stir until just combined.

  4. 6

    Add Eggs and Vanilla

Beat in the eggs, one at a time, mixing well after each addition. Add the vanilla extract and mix until smooth.

Baking

  1. 7

    Fill the Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 8

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

  3. 9

    Cool Slightly

Remove from the oven and let the cakes cool for 1 minute. Carefully run a knife around the edges to loosen the cakes.

  4. 10

    Invert and Serve

Invert each ramekin onto a plate. Dust with powdered sugar and serve with a scoop of vanilla ice cream and fresh berries if desired.
