Wings Preparation

Preheat the Oven
Preheat your oven to 400°F (200°C) to ensure it's hot enough for crispy wings.

Season the Wings
In a large bowl, combine the chicken wings, salt, black pepper, garlic powder, chili powder, and olive oil. Toss well to coat all wings evenly.

Arrange Wings on Baking Sheet
Line a baking sheet with aluminum foil for easy cleanup. Place a wire rack on top and arrange the seasoned wings in a single layer.

Bake the Wings
Bake the wings in the preheated oven for 40-45 minutes, flipping them halfway through, until they are crispy and cooked through.

Prepare the Sauce
While the wings are baking, peel and finely chop the garlic cloves. In a small saucepan, combine the chopped garlic, chili paste, soy sauce, honey, and lime juice.

Heat the saucepan over medium heat and bring to a simmer. Cook for about 5 minutes, stirring occasionally, until the sauce thickens slightly.

In a medium bowl, mix together the mayonnaise, sour cream, blue cheese, lemon juice, garlic powder, salt, and black pepper until well combined.

Cover the bowl with plastic wrap and refrigerate the dressing for at least 30 minutes to let the flavors meld.

Toss Wings in Sauce
Once the wings are done baking, remove them from the oven and transfer them to a large bowl. Pour the chili garlic sauce over the wings and toss until they are evenly coated.
