Prepare the Glass
Chill a cocktail glass by filling it with ice water and setting it aside while you prepare the drink.

Mix the Ingredients
In a cocktail shaker, combine the Hendrick's gin, beet shrub, fresh lemon juice, and Angostura bitters. Fill the shaker with ice.

Shake
Shake vigorously for about 15 seconds until well chilled.

Strain
Empty the ice water from the chilled cocktail glass and strain the mixture into the glass.
Garnishing

Add Garnish
Garnish the drink with a lemon wheel on the rim and a small handful of fresh beet greens or microgreens. Serve immediately.
