Preparation

    Prepare the Vanilla Beans

    Split each vanilla bean lengthwise using a sharp knife. Scrape the seeds from the inside of the bean and set aside, keeping the pods intact.

    Combine Milk and Cream

    In a medium saucepan, combine the whole milk, heavy cream, and the scraped vanilla bean seeds along with the pods. Heat over medium heat until it starts to simmer, but do not let it boil.

    Whisk Egg Yolks and Sugar

    In a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

    Temper the Egg Mixture

    Once the milk and cream mixture is simmering, gradually pour a small amount into the egg yolk mixture while whisking continuously to temper the eggs. This prevents them from curdling.

    Combine and Cook

    Slowly pour the tempered egg mixture back into the saucepan with the milk and cream mixture. Cook over medium-low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon, about 8-10 minutes.

    Strain the Mixture

    Remove the saucepan from heat and pour the mixture through a fine-mesh strainer into a clean bowl to remove the vanilla pods and any cooked egg bits.

    Chill the Mixture

    Cover the bowl with plastic wrap and refrigerate the mixture until completely chilled, at least 4 hours or overnight.

    Churn the Mixture

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Transfer the churned mixture into a lidded container and freeze until firm, about 2-4 hours.

    Serve with Toppings

    Scoop the vanilla bean ice cream into bowls or cones and top with whipped cream and chocolate shavings if desired.
