Method

Prepare Tilapia

Preheat the Oven

Preheat your oven to 400°F (200°C).

Season the Tilapia

In a small bowl, mix together olive oil, paprika, garlic powder, salt, and black pepper. Rub this mixture onto both sides of the tilapia fillets.

Roast the Tilapia

Place the seasoned tilapia fillets on a baking sheet lined with parchment paper. Roast in the preheated oven for about 15-20 minutes, or until the fish flakes easily with a fork.

Prepare Tomato Spinach Sauce

Heat Olive Oil

In a medium skillet, heat 1 tablespoon of olive oil over medium heat.

Sauté Onion and Garlic

Add the chopped onion and sauté for about 3-4 minutes until translucent. Then add the minced garlic and sauté for an additional 1 minute, until fragrant.

Add Tomatoes and Spinach

Stir in the canned diced tomatoes (with their juices) and bring to a simmer. Add the fresh spinach, dried basil, salt, and black pepper. Cook until the spinach is wilted and the sauce is heated through, about 5-7 minutes.

Plate the Dish

Once the tilapia is done, remove it from the oven and serve it on plates topped with the warm tomato spinach sauce.

Garnish with additional spices or fresh herbs if desired, and enjoy your oven roasted tilapia!
