Turkey Breast

    Prepare the Turkey

    Preheat your oven to 180°C (350°F). Rub the turkey breast with salt, black pepper, and olive oil. Make small slits in the skin and insert garlic cloves and rosemary.

    Roast the Turkey

    Place the turkey breast in a roasting pan and roast for about 1 hour, or until the internal temperature reaches 75°C (165°F). Baste occasionally with the melted butter.

    Rest the Turkey

    Once cooked, let the turkey breast rest for 15 minutes before slicing.

Mashed Potatoes

    Cook the Potatoes

    Peel and chop the potatoes into chunks. Boil them in salted water until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Citrus Haricot Verts Almondine

    Prepare the Haricot Verts

    Trim the ends of the haricot verts and blanch in boiling water for 3 minutes, then transfer to ice water to stop cooking.

    Sauté with Almonds

    In a skillet, melt butter over medium heat. Add sliced almonds and toast for 2-3 minutes. Add haricot verts, lemon juice, salt, and black pepper. Sauté for an additional 3-4 minutes.

Madeira Gravy

    Make the Roux

    In a saucepan, heat the turkey drippings over medium heat. Stir in flour and cook for 2 minutes until golden.

    Add Liquids

    Gradually whisk in Madeira wine and stock. Bring to a simmer and cook until thickened, about 5-7 minutes. Season with salt and black pepper.

Grand Marnier Cranberry Sauce

    Cook the Cranberries

    In a saucepan, combine cranberries, sugar, and water. Bring to a boil and simmer until berries burst, about 10 minutes.

    Finish the Sauce

    Stir in Grand Marnier and orange zest. Let cool before serving.

French Baguette

    Serve the Baguette

    Slice the French baguette and serve alongside the turkey and sides.
