Preparing Wontons

    Fry the Wontons

    Heat vegetable oil in a deep pan over medium heat. Once hot, carefully place wonton wrappers in the oil, a few at a time, and fry until they are golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels. Sprinkle with salt while still hot.

Making Mango Relish

    Prepare the Relish

    Peel and dice the ripe mango into small cubes. Finely chop the red onion and jalapeño pepper. In a bowl, combine the diced mango, chopped onion, jalapeño, lime juice, chopped cilantro, and salt. Mix well and set aside to let the flavors meld.

Preparing Tuna

    Sear the Tuna

    Slice the sushi-grade tuna into thin, even slices. In a bowl, drizzle the tuna slices with sesame oil and sprinkle with black sesame seeds and salt. Heat a non-stick pan over high heat. Sear the tuna slices for about 30 seconds on each side for a rare finish. Remove from heat and set aside.

Assembling the Tuna Towers

    Layer the Ingredients

    On a serving plate, stack three crispy wontons on top of each other to create a tower. Top each wonton tower with a generous spoonful of mango relish and a slice or two of seared tuna. Repeat for each serving.
