Preparation of Beef

    Prepare the Beef

    Using a sharp knife, finely dice the beef tenderloin into small cubes, ensuring they are uniform in size for even mixing.

    Season the Beef

    Transfer the diced beef to a mixing bowl. Add salt and black pepper to taste. Mix gently to ensure the seasoning is evenly distributed.

Combining Ingredients

    Add Condiments

    Finely chop the capers, cornichons, and fresh parsley. Add them to the bowl with the seasoned beef along with the Dijon mustard. Mix gently until all ingredients are well-combined.

    Incorporate Egg Yolks

    Create a small well in the center of the beef mixture and carefully place the egg yolks on top. Do not mix in yet; they will be added just before serving.

Serving

    Plate the Dish

    Using a ring mold or by hand, shape the steak tartare mixture onto individual serving plates. Make sure it is packed gently but firmly.

    Finish with Egg Yolk

    Gently place the reserved egg yolks on top of the shaped tartare. Optionally, garnish with additional parsley and serve immediately with toasted bread or crackers.
