Preparing the Steak

    Season the Steak

    Pat the ribeye steaks dry with paper towels. Rub both sides of the steaks with olive oil, then season generously with salt and black pepper.

    Prepare Aromatics

    Crush the garlic cloves and set aside. Gather the fresh rosemary sprigs.

    Cook the Steak

    Heat a large skillet over medium-high heat until hot. Add the steaks to the skillet and cook for 4-5 minutes for medium-rare, flipping halfway through. In the last minute of cooking, add the crushed garlic and rosemary to the skillet.

    Rest the Steak

    Remove the steaks from the skillet and let them rest on a plate for at least 5 minutes before slicing.

Preparing the Frites

    Cut the Potatoes

    Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick). Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes (First Fry)

    Drain and pat the potatoes dry. Fry them in batches for about 5-7 minutes until they are soft but not browned. Remove and drain on paper towels.

    Fry the Potatoes (Second Fry)

    Increase the oil temperature to 375°F (190°C). Fry the potatoes in batches again for 2-3 minutes until golden brown and crispy. Drain on paper towels.

    Season the Frites

    While the frites are still hot, sprinkle with salt and paprika to taste.
