Preparation

  1. 1

    Wash the Spinach

Thoroughly wash the fresh spinach under cold running water to remove any dirt or grit. Drain well and set aside.

  2. 2

    Mince the Garlic

Peel the garlic cloves and mince them finely using a knife or a garlic press.

Cooking

  1. 3

    Heat the Olive Oil

In a large skillet, heat the 2 tablespoons of olive oil over medium heat until shimmering.

  2. 4

    Sauté the Garlic

Add the minced garlic to the skillet and sauté for about 30 seconds, stirring constantly to prevent burning.

  3. 5

    Cook the Spinach

Add the washed spinach to the skillet, a handful at a time, allowing it to wilt down before adding more. This should take about 3-5 minutes.

  4. 6

    Season the Spinach

Once all the spinach has wilted, sprinkle in the salt, black pepper, and red pepper flakes. Stir to combine.

  5. 7

    Finish with Lemon Juice

Remove the skillet from heat and drizzle the lemon juice over the sautéed spinach. Toss gently to combine.
