Preparation of Marinade and Glaze

    Make the Marinade

    In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, 1 tablespoon of lemon juice, minced garlic cloves, and 1 teaspoon of honey. Season with salt and black pepper to taste.

    Marinate the Salmon

    Place the salmon fillets in a shallow dish and pour half of the marinade over them. Let them marinate in the refrigerator for at least 30 minutes.

Grilling the Vegetables

    Prepare the Vegetables

    Trim the asparagus and slice the onion into thick rings. Remove the stems from the portobello mushrooms and clean them with a damp cloth.

    Grill the Vegetables

    Preheat the grill to medium-high. Brush the asparagus, mushrooms, and onion rings with olive oil and season with salt and pepper. Grill each for about 5-7 minutes until tender and slightly charred.

    Preheat the Grill

    Ensure your grill is preheated to medium-high heat.

    Grill the Salmon

    Remove the salmon from the marinade and place it skin side down on the grill. Cook for about 6-8 minutes, then carefully flip and grill for another 4-6 minutes until the salmon is cooked through and flakes easily with a fork.

Serving

    Slice the Avocado

    While the salmon is grilling, slice the avocado into thin wedges.

    Plate the Dish

    Once everything is cooked, plate the grilled salmon, mushrooms, onions, and asparagus. Arrange the avocado slices on the side and drizzle the remaining marinade over the top as a glaze.
