For the Salmon

Prepare the Oven
Preheat your oven to 400°F (200°C).

Season the Salmon
Rub the salmon fillets with olive oil, and season with salt and black pepper.

Roast the Salmon
Place the seasoned salmon fillets on a baking sheet and roast in the preheated oven for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serve
Remove the salmon from the oven and serve with lemon wedges on the side.
For the Garlic Mashed Potatoes

Prepare the Potatoes
Peel and chop the russet potatoes into large chunks.

Boil the Potatoes
Place the chopped potatoes and garlic cloves in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.

For the Meunière Sauce

Prepare the Butter
In a small saucepan, melt the butter over medium heat until it begins to brown slightly.

Add Lemon Juice and Parsley
Remove from heat, then stir in the lemon juice and chopped fresh parsley.

Drizzle the Meunière sauce over the roasted salmon fillets before serving.
