Prime Rib Preparation

    Season the Prime Rib

    Rub the prime rib roast with olive oil, then season generously with kosher salt, black pepper, and minced garlic, ensuring it is evenly coated. Let the roast sit at room temperature for about 1 hour before cooking.

    Roast the Prime Rib

    Preheat your oven to 450°F (232°C). Place the seasoned prime rib on a rack in a roasting pan and roast for 20 minutes at high heat. Reduce the temperature to 325°F (163°C) and continue roasting for approximately 1.5-2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare. Allow the roast to rest for at least 20 minutes before slicing.

Horseradish Sauce Preparation

    Mix the Sauce

    In a bowl, combine prepared horseradish, sour cream, Dijon mustard, and lemon juice. Stir well until all ingredients are fully incorporated. Chill in the refrigerator until ready to serve.

Citrus Haricot Verts Almondine Preparation

    Prepare the Haricot Verts

    Blanch the haricot verts in boiling water for 2-3 minutes until bright green. Drain and immediately plunge them into ice water to stop the cooking process.

    Sauté the Almonds

    In a skillet, melt butter over medium heat and add sliced almonds. Sauté for 3-4 minutes until golden brown. Add the blanched haricot verts, orange zest, and lemon zest, tossing to combine. Cook for an additional 2-3 minutes until heated through.

Gratin Dauphinois Preparation

    Layer the Potatoes

    Preheat the oven to 375°F (190°C). In a greased baking dish, layer the thinly sliced potatoes, sprinkling minced garlic, grated nutmeg, and salt between layers.

    Add Cream and Cheese

    Pour heavy cream over the layered potatoes and sprinkle grated Gruyère cheese on top. Cover with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes until golden and bubbly.

Grand Marnier Cranberry Sauce Preparation

    Cook the Cranberries

    In a saucepan, combine fresh cranberries, sugar, and orange juice. Bring to a boil, then reduce heat and simmer for 10-15 minutes until the cranberries burst and the sauce thickens. Stir in Grand Marnier and allow to cool before serving.

Sweet Potato Casserole Preparation

    Preheat the oven to 350°F (175°C). Boil the cubed sweet potatoes in salted water until tender, roughly 15-20 minutes. Drain well and mash.

    In a large bowl, combine mashed sweet potatoes, brown sugar, melted butter, eggs, and vanilla extract. Mix until smooth. Transfer to a greased baking dish and bake for 25-30 minutes until set.
