Dough Preparation

Activate Yeast
In a small bowl, combine warm milk (110°F), active dry yeast, and sugar. Let it sit for about 5-10 minutes until frothy.

Make Dough
In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture, egg, and water. Mix until a dough forms.

Knead and Chill
Knead the dough on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover with plastic wrap, and refrigerate for at least 1 hour.

Butter Block
While the dough is chilling, prepare the butter block by placing the unsalted butter between two sheets of parchment paper and rolling it into a rectangle about ½ inch thick. Refrigerate until firm.

Roll Out Dough
Remove the dough from the refrigerator and roll it out into a rectangle about 1/4 inch thick.

Laminate Dough
Roll the dough out again into a rectangle and fold it into thirds like a letter. Repeat this process two more times, chilling the dough for 30 minutes between each fold.

Cut and Fill
After the final fold, roll out the dough to about 1/8 inch thick. Cut into rectangles of about 4x6 inches. Place a piece of dark chocolate on one side of each rectangle and fold over the dough to enclose the chocolate.

Prepare Egg Wash
In a small bowl, whisk together one egg and 1 tablespoon of milk. Brush the egg wash over the top of each pastry.

Final Rise
Place the filled pastries on a baking sheet lined with parchment paper. Cover with a kitchen towel and let rise in a warm place for about 30 minutes.

Preheat Oven
Preheat your oven to 400°F (200°C).

Bake Pastries
Bake the pastries in the preheated oven for 15-20 minutes, or until golden brown. Allow to cool slightly before serving.
