Beat the Eggs
In a bowl, crack the 4 large eggs and add 1 teaspoon of salt and 0.5 teaspoon of black pepper. Whisk the eggs until well combined and slightly frothy.

Cook the Omelette
In a non-stick skillet, melt 2 tablespoons of butter over medium-low heat. Pour in the beaten eggs and cook gently, lifting the edges with a spatula to let the uncooked egg flow underneath. Once the eggs are set but still slightly runny on top, add the crispy shoestring potatoes on one half of the omelette.

Fold and Finish
Carefully fold the omelette in half over the potatoes and cook for an additional minute. Slide the omelette onto a plate.

Toast the Bread
While the omelette is cooking, toast the 4 slices of bread to your desired crispness. Spread 0.5 tablespoon of butter on each slice once toasted.
