Method

Cake Directions

  1. 1

    Prepare the oven and ramekins

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and lightly dust them with cocoa powder to prevent sticking.

  2. 2

    Melt chocolate and butter

In a microwave-safe bowl, combine the semi-sweet chocolate and unsalted butter. Heat in the microwave in 30-second intervals, stirring in between, until completely melted and smooth. Let it cool slightly.

  3. 3

    Mix dry ingredients

In a separate bowl, whisk together gluten-free flour, granulated sugar, cocoa powder, baking powder, and salt until well combined.

  4. 4

    Combine wet ingredients

In another bowl, whisk together the eggs, egg yolks, and vanilla extract until smooth.

  5. 5

    Combine all ingredients

Pour the melted chocolate mixture into the egg mixture and stir until combined. Gradually add the dry ingredients to the wet mixture and mix until just combined; do not overmix.

  6. 6

    Fill ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

  7. 7

    Bake

Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  8. 8

    Cool and serve

Remove the ramekins from the oven, let them cool for 1 minute, then gently run a knife around the edges to loosen. Invert onto a plate and serve warm, topped with a scoop of vanilla gelato.

Gelato Directions

  1. 9

Scoop the vanilla gelato into bowls or directly onto the warm lava cakes before serving.
