Prepare the Chorizo
In a skillet over medium heat, add the pork chorizo sausage. Cook for about 5-7 minutes, breaking it apart with a spatula until fully cooked and browned. Remove from heat and set aside.

Mix the Eggs
In a mixing bowl, combine the large eggs, milk, salt, and black pepper. Whisk until well combined and the mixture is frothy.

Cook the Omelette
In a non-stick skillet, heat the olive oil over medium heat. Pour in the egg mixture and cook for about 2-3 minutes, until the edges begin to set.

Add Chorizo and Cheese
Once the edges have set, add the cooked chorizo and shredded cheese (if using) on one half of the omelette. Cook for an additional 2-3 minutes until the omelette is fully set.

Fold and Serve
Carefully fold the omelette in half over the chorizo filling. Slide onto a plate and keep warm while you prepare the pico de gallo.
Pico de Gallo Relish

Combine Ingredients
In a bowl, combine the diced tomatoes, finely chopped red onion, chopped cilantro, lime juice, minced jalapeño, and salt.

Mix Well
Gently toss the ingredients together until well mixed. Taste and adjust seasoning with more salt or lime juice if desired.

Serve
Spoon the pico de gallo relish generously over the omelette before serving.
