    Prepare the Ingredients

    Dice the chicken thighs, and slice the andouille sausage into rounds. Chop the onion, green bell pepper, celery, and mince the garlic.

Cooking

    Sauté Vegetables and Meats

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, green bell pepper, and celery. Sauté until the vegetables are softened, about 5 minutes. Add the minced garlic and cook for another minute.

    Cook the Meats

    Add the diced chicken and sliced sausage to the pot. Cook until the chicken is browned on all sides, about 5-7 minutes.

    Add Spices and Tomatoes

    Stir in the paprika, cayenne pepper, thyme, bay leaves, salt, and black pepper. Add the canned diced tomatoes and mix well.

    Add Rice and Broth

    Pour in the chicken broth and bring to a boil. Once boiling, stir in the long-grain rice.

    Simmer

    Reduce the heat to low, cover the pot, and let it simmer for about 25-30 minutes, or until the rice is cooked and has absorbed the liquid.

    Serve

    Remove the bay leaves, fluff the jambalaya with a fork, and serve hot. Enjoy your New Orleans style jambalaya!
