Method

Base

  1. 1

    Prepare the English Muffins

Split the English muffins in half and toast them until they are golden brown. Spread 1 tablespoon of butter on each half while they are warm.

Toppings

  1. 2

    Cook the Bacon

In a skillet over medium heat, cook the bacon slices until they are crispy. Remove from the skillet and place on paper towels to drain excess grease.

  2. 3

    Fry the Eggs

In the same skillet with a little bacon grease left, crack the eggs and cook them over easy until the whites are set but the yolks remain runny. This should take about 2-3 minutes.

Hollandaise Sauce

  1. 4

    Prepare the Hollandaise Sauce

In a medium bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler method). Gradually whisk in the melted butter until the sauce thickens. Season with salt and cayenne pepper, adjusting to taste.

Assembly

  1. 5

    Assemble the Heavenly Breakfast

On each toasted English muffin half, layer the crispy bacon, followed by the fried egg. Drizzle generously with the warm hollandaise sauce and sprinkle with powdered sugar for a sweet finish.
