Preparing the Waffle Batter

Activate the Yeast
In a small bowl, dissolve the active dry yeast in warm milk (about 37°C) and let it sit for 5-10 minutes until frothy.

Combine Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, and salt.

Combine Wet and Dry
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

Add Pearl Sugar
Gently fold in the pearl sugar into the batter until evenly distributed.

Let the Batter Rise
Cover the bowl with a clean kitchen towel and let the batter rise in a warm place for about 1 hour or until doubled in size.
Cooking the Gaufres

Preheat the Waffle Iron
Preheat your waffle iron according to the manufacturer's instructions.

Cook the Waffles
Once the waffle iron is ready, scoop about 1/2 cup of batter into the center of the iron and close it. Cook for 3-5 minutes or until golden brown and crispy.

Remove and Serve
Carefully remove the waffle and repeat the process with the remaining batter.
