    Cut the Potatoes

    Wash and peel the Russet potatoes. Using a sharp knife, slice each potato into thin strips, approximately 1/4 inch thick. For consistent cooking, try to keep the slices uniform in size.

Frying

    Heat the Oil

    In a large, heavy-bottomed pot, pour in the vegetable oil and heat it over medium-high heat until it reaches 350°F (175°C). You can use a deep-fry thermometer to check the temperature.

    Fry the Potatoes

    Once the oil is hot, carefully add a handful of the cut potatoes into the oil, being careful not to overcrowd the pot. Fry the potatoes for about 4-5 minutes, or until they are golden brown and crispy.

    Drain the Frites

    Using a slotted spoon, remove the fries from the oil and transfer them to a plate lined with paper towels to drain excess oil.

Seasoning

    Season the Frites

    While the fries are still hot, sprinkle them with salt and black pepper to taste. Toss gently to ensure even distribution of the seasoning.
