In a large mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and a pinch of salt until well combined and frothy.

Preheat a non-stick skillet or griddle over medium heat. You can add a little butter or oil to the surface for added flavor and to prevent sticking.

Take one slice of bread and dip it into the egg mixture, ensuring both sides are fully coated. Allow any excess mixture to drip off.
