Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C). This high temperature will help achieve a crispy texture on the fingerling potatoes.
- 2
Wash and Dry Potatoes
Thoroughly wash the fingerling potatoes under cool running water to remove any dirt. Pat them dry with a clean kitchen towel.
- 3
Cut Potatoes
Slice each fingerling potato in half lengthwise to ensure they roast evenly and absorb the flavors from the coating.
Coating
- 4
Prepare Coating
In a large mixing bowl, combine the cornmeal, salt, black pepper, garlic powder, and paprika. Mix well to ensure an even distribution of the spices.
- 5
Roasting
- 6
Arrange on Baking Sheet
Spread the coated fingerling potatoes in a single layer on a baking sheet lined with parchment paper. Ensure they are not overcrowded to allow for even roasting.
- 7
Roast in Oven
Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the potatoes are golden brown and crispy. Flip the potatoes halfway through the cooking time for even browning.
- 8
Serve
Once roasted, remove the potatoes from the oven and let them cool for a few minutes. Serve warm as a delicious side dish.
