Prepare the Waffle Batter
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

Preheat the Waffle Iron
Preheat your waffle iron according to the manufacturer’s instructions.

Cook the Croffles
Lightly grease the waffle iron with cooking spray or brush with oil. Pour enough batter to cover the surface of the waffle iron and close it. Cook for about 3-5 minutes or until golden brown and crispy.

Repeat
Remove the croffle and repeat the process with the remaining batter.

Prepare Toppings
While the croffles are cooking, prepare your toppings. Wash the blueberries and set aside. Cook the bacon until crispy, then crumble it.

Assemble Toppings
Once the croffles are ready, place them on a serving plate and top each one with blueberries, a scoop of gelato, crumbled bacon, and a generous dollop of whipped cream.
Cognac-infused Syrup

Prepare the Syrup
In a small saucepan over medium heat, combine the maple syrup, cognac, and vanilla extract. Stir until warmed through and well combined.
