Dice the chorizo sausage, country potatoes, onion, and jalapeños. Shred the Chihuahua cheese and set aside.

In a large skillet, heat the olive oil over medium heat. Add the diced country potatoes and season with salt, black pepper, and paprika. Sauté for about 10 minutes, stirring occasionally until the potatoes are golden brown and tender.

Stir in the diced jalapeños and cook for an additional 2-3 minutes, allowing the flavors to meld together.

Reduce the heat to low and sprinkle the shredded Chihuahua cheese evenly over the mixture. Cover the skillet and let it sit for 3-5 minutes, until the cheese melts.
