Pancake Batter

Method

Pancake Batter

  1. 1

    Prepare the Batter

In a medium bowl, whisk together the flour, baking powder, and sugar until combined.

  2. 2

    Mix Wet Ingredients

In another bowl, beat the eggs, then add the milk, mascarpone cheese, and vanilla extract. Mix until smooth.

  3. 3

    Combine Mixtures

Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Do not overmix; a few lumps are okay.

Cooking Pancakes

  1. 4

    Heat the Pan

Preheat a non-stick skillet over medium-low heat. Lightly grease with butter or oil.

  2. 5

    Cook the Pancakes

Spoon about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.

  3. 6

    Flip and Finish

Carefully flip the pancakes and cook for another 2-3 minutes on the other side until golden brown. Repeat with remaining batter.

Pistachio Whipped Cream

  1. 7

    Whip the Cream

In a large bowl, combine the heavy cream, powdered sugar, and vanilla extract. Whip using an electric mixer until soft peaks form.

  2. 8

    Add Pistachios

Fold in the finely chopped pistachios gently until evenly distributed.

Assembly

  1. 9

    Stack the Pancakes

Layer the pancakes on a serving plate, stacking them as desired.

  2. 10

    Add Toppings

Drizzle melted chocolate over the pancakes, then top with a generous dollop of pistachio whipped cream, toasted kataifi, and fresh strawberries.
