In a medium bowl, whisk together the flour, baking powder, and sugar until combined.

Combine Mixtures
Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Do not overmix; a few lumps are okay.
Cooking Pancakes

Heat the Pan
Preheat a non-stick skillet over medium-low heat. Lightly grease with butter or oil.

Spoon about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.

Carefully flip the pancakes and cook for another 2-3 minutes on the other side until golden brown. Repeat with remaining batter.

In a large bowl, combine the heavy cream, powdered sugar, and vanilla extract. Whip using an electric mixer until soft peaks form.

Fold in the finely chopped pistachios gently until evenly distributed.

Layer the pancakes on a serving plate, stacking them as desired.
