Method

Crust Preparation

  1. 1

    Prepare the crust

Preheat your oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, 0.5 cups of granulated sugar, and melted butter until combined. Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer.

  2. 2

    Bake the crust

Bake the crust in the preheated oven for 10 minutes, then remove and let it cool while you prepare the filling.

Cheesecake Filling Preparation

  1. 3

    Prepare the filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add in 1 cup of granulated sugar, mixing until well combined.

  2. 4

    Add remaining ingredients

Add the sour cream and vanilla extract to the cream cheese mixture, mixing until incorporated. Add the eggs one at a time, mixing well after each addition. Gently fold in 1.5 cups of blueberries.

  3. 5

    Pour filling into crust

Pour the cheesecake filling over the prepared crust in the springform pan, smoothing the top with a spatula.

  4. 6

    Bake the cheesecake

Bake in the preheated oven at 325°F (160°C) for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour.

  5. 7

    Cool the cheesecake

Remove the cheesecake from the oven and let it cool completely at room temperature before refrigerating for at least 4 hours or overnight.

Topping Preparation

  1. 8

    Prepare the topping

In a small saucepan, combine 1 cup of fresh blueberries, 2 tablespoons of granulated sugar, and 1 tablespoon of lemon juice. Cook over medium heat, stirring gently until the blueberries start to burst and the mixture thickens slightly, about 5-7 minutes.

  2. 9

    Cool and serve

Allow the topping to cool before spooning it over the chilled cheesecake. Serve slices chilled.
