Assemble the Wellington
Lay out the prosciutto slices on a sheet of plastic wrap, slightly overlapping. Spread the mushroom duxelles over the prosciutto. Place the filet mignon on top and brush with Dijon mustard. Roll tightly using the plastic wrap, then refrigerate for 30 minutes.

Bake
Preheat the oven to 400°F (200°C). Place the wrapped beef on a baking sheet and bake for 25-30 minutes until golden brown and the internal temperature reaches 130°F (54°C) for medium rare.

Prepare the Sauce
In a saucepan, melt the butter over medium heat. Add the shallots and cook until soft. Add the beef stock and crushed peppercorns, bringing to a simmer. Reduce the sauce by half, then stir in the heavy cream and simmer until thickened, about 5-7 minutes.

Prepare the Potatoes
Preheat the oven to 375°F (190°C). In a greased baking dish, layer the sliced potatoes. In a bowl, mix heavy cream, garlic, salt, and pepper, then pour over the potatoes. Sprinkle with cheddar cheese.
