For the Banana Bread Pudding

Prepare the Bread
Preheat the oven to 350°F (175°C). Cut the banana bread loaf into 1-inch cubes and place them in a large mixing bowl.

Combine Bread and Custard
Pour the custard mixture over the cubed banana bread, ensuring all pieces are soaked. Let it sit for about 15 minutes to absorb the custard.

Add Chocolate Chips
Gently fold in the chocolate chips into the bread mixture.

Transfer the mixture into a greased baking dish and bake for 45-50 minutes or until the top is golden brown and a knife inserted in the center comes out clean.

Add Butter and Cream
Once the sugar is melted, carefully stir in the butter until melted, then slowly whisk in the heavy cream until smooth.

Add a pinch of sea salt, stir well, and remove from heat. Allow the caramel sauce to cool slightly.
For Serving

Spoon a generous serving of warm banana bread pudding onto a plate, drizzle with caramel sauce, and top with a scoop of vanilla gelato.
