Prepare Potatoes Lyonnaise

Peel and dice the potatoes. In a skillet, heat olive oil over medium heat. Add diced potatoes and sliced onions, season with salt and pepper, and cook until the potatoes are golden brown and tender, about 15-20 minutes. Stir occasionally.

Cook Bacon or Sausage

In a separate skillet, cook the bacon or sausage over medium heat until crispy and cooked through, about 5-7 minutes. Remove from heat and drain on paper towels.

Cook Eggs

In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Crack in the eggs and cook to your desired doneness (sunny-side up, over-easy, etc.). Season with salt and pepper.

Toast Brioche

In the same skillet used for the eggs, add the remaining tablespoon of butter and toast the brioche slices until golden brown on both sides.

Assemble and Serve

On a plate, serve the crispy potatoes lyonnaise alongside the cooked bacon or sausage. Top with the cooked eggs and serve with toasted brioche on the side.
