Cook the Chorizo
In a separate pan, cook the chorizo over medium heat until browned and fully cooked, breaking it up with a spoon. This should take around 5-7 minutes.

Prepare Pulled Chicken
If using pre-cooked chicken, shred it into bite-sized pieces. If cooking fresh chicken, boil it until fully cooked, about 20 minutes, then shred.
Assembly of the Cemita

Prepare the Rolls
Slice the cemita rolls horizontally without cutting all the way through to create a pocket.

Layer the Meats
Start by adding the breaded pork cutlet to the bottom half of the roll, followed by a layer of chorizo and then the pulled chicken.

Add Toppings
Slice the avocados and layer them on top of the meats. Add shredded queso Oaxaca, pico de gallo, a drizzle of chipotle sauce, fresh cilantro, and lettuce.

Close the Sandwich
Close the cemita roll and gently press down to compact the ingredients.
