Watermelon Juice (if making fresh)

    Make fresh watermelon juice

    Place 2 cups chilled cubed seedless watermelon in a blender. Add a 1/4 teaspoon pinch of salt if using. Blend until very smooth, about 20–30 seconds. Strain the puree through a fine-mesh sieve into a bowl or measuring cup, pressing solids with the back of a spoon to extract as much juice as possible. You should yield roughly 3 oz (a little over 1/3 cup) of juice per 2 cups of cubes; adjust quantities as needed. Chill briefly if not already cold.

    Prepare glass

    Run a lime wedge around the rim of a rocks or coupe glass. Dip the rim into a shallow plate of coarse salt or Tajín to coat. Fill the glass with fresh ice if serving on the rocks; for a coupe, leave empty or chill in the freezer.

    Build and shake

    In a cocktail shaker, add 1 cup of ice, 2 oz Milagro Silver tequila, 3 oz fresh watermelon juice, 0.75 oz fresh lime juice, 0.25 oz fresh lemon juice, 0.5 oz triple sec, and 0.5 oz simple syrup (or agave syrup). Secure the lid and shake vigorously for 10–15 seconds until the shaker is very cold to the touch and the ingredients are well combined.

    Strain and serve

    Double-strain (using the shaker’s strainer and a fine mesh strainer) into the prepared glass over fresh ice (for a rocks glass) or into the chilled coupe. This removes pulp and any small ice chips for a silky texture.

    Garnish

    Garnish with a lime wheel or wedge on the rim and an optional small watermelon wedge or melon ball on a pick. Serve immediately.

    Notes

    Taste before serving and adjust sweetness or acidity: add 1/4 oz more simple syrup if too tart, or 1/4 oz more lime if too sweet. If you prefer a frozen version, blend the cocktail ingredients with 1 cup crushed ice until slushy.
