Cocktail
Optional: celery-salt rim
Method
Cocktail
- 1
Prep glass (optional)
If using the celery-salt rim, moisten the rim of a chilled rocks glass with a lime wedge. Mix the coarse sea salt, crushed celery seed and lime zest on a small plate, then press the glass rim into the mixture. Set the glass in the freezer to chill while you build the cocktail.
- 2
Muddle aromatics
In a cocktail shaker, add the fresh basil leaves and the celery leaf (or small stalk). Gently muddle just 4–6 times to bruise the herbs and release aroma—avoid over-muddling which makes herbs bitter.
- 3
Build and shake
Add the reposado tequila, fresh lime juice, green chartreuse, dry vermouth, agave syrup and two dashes of orange bitters to the shaker. Fill the shaker with ice and cap. Shake vigorously for 12–15 seconds until the outside of the shaker is frosty and well-chilled.
- 4
Double strain
Place a fine mesh strainer over the chilled (or rimmed) rocks glass and pour the cocktail through the shaker strainer and then the fine strainer to remove herb bits and small ice shards. This produces a clean, smooth drink while preserving aromatic clarity.
- 5
Finish and garnish
Add a single large ice cube or sphere to the glass. Express the oils from a lime wheel over the cocktail by gently squeezing and running it around the rim, then drop it into the drink. Slap the remaining basil leaf (if any) between your palms and rest it on the ice for an aromatic top. Optionally tuck the celery leaf beside the basil for a vegetal perfume.
- 6
Serve immediately. The Siembra Valles presents herbal, vegetal and lightly sweet notes balanced by bright lime and the rounded oak of the reposado—sip slowly to appreciate the layered aromatics.
Notes & substitutions
- 7
If green chartreuse is too herbal or unavailable, substitute with 1/2 oz of yellow chartreuse (slightly sweeter and milder) or 1/4 oz chartreuse + 1/4 oz dry curaçao for citrus lift.
- 8
For a drier version, reduce agave syrup to 0.125 oz (a barspoon). For a brighter profile, increase lime juice to 1 oz and reduce vermouth to 0.25 oz.
- 9
The celery aroma can be swapped for a small celery leaf oil spray or omitted entirely if undesired; the basil keeps the cocktail fresh and aromatic.
