If you want a subtle smoky-salty rim, place the smoked salt in a shallow dish. Moisten the outer edge of a chilled rocks glass with a lime wedge and gently dip the rim into the salt so a thin ring adheres. Set the glass aside.

Combine spirits and modifiers
In a mixing glass add 1 oz añejo rum, 1 oz reposado tequila and 0.5 oz mezcal. Add 0.5 oz amontillado (or light oloroso) sherry, 0.5 oz fresh lime juice and 0.5 oz agave syrup. Add 2 dashes aromatic bitters and 1 dash orange bitters.

Chill & dilute
Fill the mixing glass with plenty of ice. Stir briskly but smoothly for 25–35 seconds (20–30 full stir rotations) until the mixture is well chilled, slightly viscous and some dilution has been achieved. The goal is a silky texture and balanced strength.

Strain & serve
Place a large ice cube or sphere in the prepared rocks glass. Double-strain the mixture into the glass over the ice using a julep strainer and a fine mesh strainer to remove any tiny ice shards and pulp for clarity.

Express & garnish
Take the orange peel, hold it about 3–4 inches above the drink with the outer skin facing down and give it a sharp twist to express the oils over the surface. Optionally rub the peel around the rim (over the salted edge if used) and drop it into the glass as garnish.

Serve
Serve immediately. Encourage the drinker to sip slowly to appreciate the layered notes of oak, smoke, citrus and the nutty, saline finish from the sherry and smoked salt.
