    Prepare glass

    If serving on the rocks, fill an old-fashioned (rocks) glass with ice to chill while you mix. If serving up, chill a coupe or martini glass in the freezer for a few minutes.

    Combine ingredients

    In a cocktail shaker, add 2 oz Montelobos Espadín mezcal, 0.75 oz fresh lime juice, 0.5 oz agave nectar, 0.5 oz orange liqueur, 0.25 oz fresh grapefruit juice (if using), and 1 dash of Angostura bitters.

    Add ice and shake

    Fill the shaker with ice (enough to nearly fill). Secure the lid and shake vigorously for 12–18 seconds until the outside of the shaker is very cold and slightly frosty.

    Strain

    Discard ice from the chilled serving glass if you chilled it. Double-strain (using a fine mesh strainer if available) into the chilled coupe for a up presentation, or into the rocks glass over fresh large ice if serving on the rocks.

    Garnish and finish

    Express the oils from a grapefruit twist over the drink by holding the twist skin-side down and squeezing it over the surface, then rub the peel around the rim and drop it in (or use a lime wheel). Serve immediately.

    Notes

    Adjust agave nectar to taste if you prefer sweeter or drier. The optional 0.25 oz grapefruit juice brightens the drink and complements the mezcal's smoke; omit if you want a more classic, lime-forward cocktail.
