Method
Cocktail
- 1
Prepare glass
If desired, rub a lime wedge around the rim of a rocks glass and dip lightly into a small plate with a pinch of salt for a subtle salted rim. Set glass aside.
- 2
Combine ingredients
In a cocktail shaker add the reposado tequila, fresh lime juice, agave syrup, Aperol, fresh grapefruit juice and two dashes of orange bitters.
- 3
Add ice and shake
Add 4–6 ice cubes to the shaker, cap it and shake vigorously for 10–12 seconds until the outside of the shaker is frosty and the mixture is well-chilled.
- 4
Strain and serve
Fill the prepared rocks glass with fresh ice. Double-strain the shaken cocktail into the glass using a Hawthorne strainer and a fine mesh strainer to remove tiny ice shards and pulp.
- 5
Garnish
Express the oils of a grapefruit twist over the drink, run the twist around the rim, then drop it into the glass and add a lime wheel on the rim. Serve immediately.
- 6
Notes
Adjust agave syrup to taste for sweetness. Use blanco tequila instead of reposado for a brighter, more herbal profile, or increase Aperol to 0.75 oz for stronger bitter-orange character.
