    Prepare steaming liquid

    In a large pot fitted with a steamer basket, combine 8 cups water, 1 cup white vinegar, 2 tablespoons sea salt, and 1 teaspoon cracked black pepper. Bring the liquid to a vigorous simmer over high heat.

    Clean and ready crabs

    If not already cleaned, humanely dispatch and clean the crabs: remove top shell, pull out gills and guts, rinse body cavity under cold water. Keep body meat intact for presentation or remove picked meat into a bowl if preferred. Pat dry with paper towels.

    Steam the crabs

    Place the jumbo blue crabs in the steamer basket in a single layer if possible. Cover and steam over the simmering poaching liquid for 12–16 minutes for jumbo crabs (6–8 oz meat each) until shells are bright red and meat registers 140–145°F if tested. Start timing when steam is evident again after placing crabs in pot.

    Cool and break down

    Transfer steamed crabs to a large bowl or tray to cool slightly for 5 minutes. Serve whole for cracking at table, or halve and remove clusters of meat from body and claws using crab crackers and picks. Reserve shell pieces for presentation. Keep warm or chill briefly depending on service temperature preference.

Louie Sauce (makes about 1/2 cup)

    Combine mayonnaise (3 tbs) and Greek yogurt (2 tbs) in a medium bowl. Whisk until smooth.

    Add 1 teaspoon fish sauce (or anchovy paste), 1 teaspoon Dijon mustard, 1 tablespoon fresh lemon juice, and 1 teaspoon champagne vinegar. Whisk to emulsify.

    Stir in 1 teaspoon chopped capers, 1 tablespoon minced green onion, 1 teaspoon chopped tarragon, 1 teaspoon chopped chives and 1 teaspoon chopped parsley. Add 1/2 teaspoon Worcestershire sauce, a couple drops of hot sauce if using, 1/4 teaspoon salt, and 1/8 teaspoon freshly ground black pepper.

    Taste and adjust: add a teaspoon of cold water if sauce is too thick, more lemon juice for brightness, or a pinch more salt if needed. Chill for at least 10 minutes to let flavors meld. Sauce will keep refrigerated up to 3 days.

Finishing & Serve

    Warm or plate: If serving hot-cracked, keep crab warm on plates and serve immediately with heated melted butter in a small dish (optional). If serving chilled, let crab cool to room temperature or chill briefly and serve over crushed ice.

    Arrange sea saltines or water crackers on the side. Place Louie sauce in a small bowl for dipping or spoon a couple of generous dollops onto the plate next to the crab.

    Garnish each plate with lemon wedges and a sprig of fresh dill or parsley. Encourage guests to squeeze lemon over crab meat and dip into Louie sauce or melted butter as desired.

    Leftover handling: Refrigerate any picked crab meat and Louie sauce separately in airtight containers for up to 2 days (crab) and 3 days (sauce).
