    Prepare and preheat

    Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan and line with parchment or lightly flour the surface.

    Dry ingredients

    Whisk together 1.5 cups all-purpose flour, 1 tsp baking powder, and 1/4 tsp fine salt in a medium bowl. Set aside.

    Beat eggs and sugar

    In a large mixing bowl, using a hand or stand mixer with the whisk attachment, beat 5 room-temperature eggs on high speed for 3–4 minutes until foamy and pale. Gradually add 1 cup granulated sugar and continue beating until mixture is thick, pale, and ribbons form when the whisk is lifted (about 3–4 more minutes).

    Add milk, vanilla and butter

    Reduce speed to low. Add 1/4 cup whole milk and 2 tsp vanilla extract, mixing just to combine. Slowly drizzle in 2 tablespoons melted, cooled butter and mix briefly to incorporate.

    Fold in dry ingredients

    Using a rubber spatula, gently fold the dry flour mixture into the egg mixture in thirds. Fold until no streaks remain but avoid overmixing to keep the batter airy.

    Bake

    Pour batter into the prepared 9x13 pan and smooth the top. Bake in the preheated oven for 20–25 minutes, or until the top is golden and a toothpick inserted into the center comes out with a few moist crumbs (avoid overbaking). Remove from oven and allow to cool in the pan for 10 minutes.

Tres Leches (Milk Soak)

    Make milk mixture

    While the cake cools, whisk together 1/2 cup whole milk, 1 cup evaporated milk, 1 cup sweetened condensed milk, 1/2 cup heavy cream, and 1 tsp vanilla extract in a bowl until smooth and uniform.

    Poke and soak

    Use a skewer or fork to poke holes evenly over the warm cake (about 20–30 pokes). Slowly pour the milk mixture over the cake, starting at one corner and letting it absorb before adding more. Pour until the cake has absorbed most of the liquid—cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow full saturation and chilling.

Meringue Topping

    Prepare meringue

    When ready to finish, preheat the oven broiler to low (or prepare a kitchen torch). In a clean, grease-free bowl, beat 4 room-temperature egg whites with 1/2 cup granulated sugar and 1/4 tsp cream of tartar. Start at medium speed until foamy, then increase to high and beat until glossy stiff peaks form. Beat in 1/2 tsp vanilla extract at the end.

    Top and brown

    Spread the meringue evenly over the chilled, soaked cake, making decorative peaks with a spatula. For a browned top: either place the cake under a low broiler for 30–60 seconds, watching constantly until peaks are lightly golden, or carefully toast the meringue with a kitchen torch to desired color.

Finish & Serve

    Garnish and chill

    Lightly dust the surface with 1/4 tsp ground cinnamon and, if using, arrange 1/2 cup fresh berries or cherries on top. Chill the cake for at least 30 minutes after browning the meringue to set flavors.

    Slice and serve

    Use a sharp knife dipped in hot water and wiped dry between cuts for clean slices. Cut into 12 equal pieces. Optionally dust each slice with 1 tablespoon powdered sugar before serving. Store leftover cake, covered, in the refrigerator for up to 3 days.
