Original House Margarita

Method

Original House Margarita

  1. 1

    Prepare glass

Run a lime wedge around the rim of a chilled margarita or rocks glass. Dip the rim into kosher salt or tajín to coat. Set glass aside.

  2. 2

    Blend

In a blender combine 2 oz blanco tequila, 1 oz orange liqueur, 1 oz fresh lime juice, 0.5 oz agave syrup and 1.5 cups crushed ice. Pulse on high 8–12 seconds until smooth and slushy. Scrape down sides and pulse once more if needed.

  3. 3

    Finish & serve

Pour the frozen margarita into the prepared glass, garnish with a lime wedge, and serve immediately. Adjust sweetness with extra agave if desired.

Mango Chile Frozen Margarita

  1. 4

    Prepare glass

Wet the rim of a chilled coupe or rocks glass with a lime wedge and dip into chili-lime seasoning (Tajín). Set aside.

  2. 5

Make mango purée (if using fresh)

If using fresh mango, trim and cube one ripe mango and purée in the blender until very smooth. Measure 0.75 cup purée. If using frozen purée, thaw slightly so it blends evenly.

  3. 6

    Blend

In a blender combine 2 oz blanco tequila, 0.75 oz orange liqueur, 0.75 oz fresh lime juice, 0.75 cup mango purée, 0.25 oz agave syrup and 1.5 cups crushed ice. Blend on high until evenly slushy (about 10–15 seconds). Taste and add up to 0.25 oz more agave if mango is tart.

  4. 7

    Finish & serve

Pour into the prepared glass. Garnish with a thin mango slice or a lime wheel and a light dusting of chili-lime seasoning on top if desired. Serve immediately.

Watermelon Frozen Margarita

  1. 8

    Prepare watermelon

If not pre-chilled, place 1 cup seedless watermelon chunks in the freezer for 10–15 minutes until very cold but not fully frozen (this preserves texture).

  2. 9

    Prepare glass

Optional: rim a chilled glass with lime and a touch of salt or leave clean. Set aside.

  3. 10

    Blend

In a blender combine 2 oz blanco tequila, 0.75 oz orange liqueur, 0.75 oz fresh lime juice, 1 cup chilled watermelon chunks, 0.5 oz simple syrup (or agave) and 1.25 cups crushed ice. Blend on high 8–12 seconds until uniformly slushy. Taste and add a touch more syrup if watermelon is underripe.

  4. 11

    Finish & serve

Pour into the chilled glass and garnish with a small watermelon wedge or mint sprig. Serve immediately.
